Cook's notes

  • Press garlic directly into the hot pan for deeper flavor.

  • Let the dish rest for 2 minutes after cooking to allow flavors to meld.
  • Top with extra cheese and a sprinkle of chili powder for a restaurant-style finish.

Easy swaps

  • Instead of ground beef, use ground turkey or plant-based crumbles
  • Instead of cheddar cheese, use Monterey Jack, pepper jack, or a Mexican blend
  • Instead of diced tomatoes, use fire-roasted tomatoes for a smoky twist
  • Instead of chili powder, use 1 tablespoon ancho chili powder plus 1 teaspoon cayenne
  • Instead of ground cumin, use smoked paprika or taco seasoning mix

Frequently asked

Can I use a different pasta shape?

Yes! Elbow macaroni is classic, but shells, rotini, or small penne work great too. Adjust cooking time according to package directions.

How do I make this spicier?

Add 1/2 teaspoon cayenne pepper or a diced jalapeño with the onion. You can also use hot chili powder or a dash of hot sauce before serving.

Can I make this in a slow cooker?

Absolutely. Brown the beef and onion first, then transfer to a slow cooker with remaining ingredients (except cheese and pasta). Cook on low 4–6 hours, then stir in cooked macaroni and top with cheese before serving.

Is this gluten-free?

To make it gluten-free, use certified gluten-free macaroni and ensure your chili powder and tomato sauce are gluten-free.

Can I add vegetables?

Yes! Stir in a cup of frozen corn, diced bell peppers, or a handful of spinach during the last 5 minutes of cooking.
