Warm up your weeknights with this creamy and comforting Corn Chowder, a quick one-dish meal ready in under an hour. Made with sweet corn, tender potatoes, and a rich broth thickened with a simple flour-milk mixture, this chowder is perfect for cozy dinners or meal prep. Use fresh or frozen corn for year-round convenience.

Ingredients

Makes 1 serving

  • 1 margarine
  • 3 corn
  • 1 onion
  • 1/2 celery
  • 1 potatoes
  • 1 chicken broth
  • 1 garlic clove
  • 1 2% low-fat milk
  • 2 dried basil
  • 1/2 black pepper
  • 1/2 parsley flakes
  • 1/4 Worcestershire sauce
  • 1 1/2 flour

Method

  1. Melt margarine in Dutch oven being careful not to burn.

  2. Sauté onion and celery until softened.

  3. Blend 1/2 cup milk and 1/4 cup flour; set aside.

  4. Add remaining ingredients into pan and simmer about 15 minutes.

  5. Add flour and milk mixture to chowder slowly and simmer to desired thickness.

  6. Additional milk may be added if too thick.

  7. *If using frozen corn, let thaw and drain before adding.

Cook's notes

  • For a richer flavor, substitute margarine with butter and use whole milk instead of 2%.
  • If using frozen corn, thaw and drain it first to prevent excess water from thinning the chowder.
  • To make it dairy-free, swap the milk for unsweetened almond or oat milk and use vegan margarine.

Easy swaps

  • Instead of margarine, use butter or olive oil
  • Instead of 2% low-fat milk, use whole milk, half-and-half, or plant-based milk
  • Instead of chicken broth, use vegetable broth for a vegetarian version
  • Instead of dried basil, use fresh basil (use 2 tablespoons chopped)

Frequently asked

Can I use frozen corn instead of fresh?

Yes, frozen corn works great. Just thaw and drain it before adding to the pot to maintain the right consistency.

How do I make this chowder gluten-free?

Replace the all-purpose flour with a gluten-free all-purpose flour blend or cornstarch. Mix 1.5 tablespoons cornstarch with 1/4 cup cold milk before adding.

Can I add protein like chicken or bacon?

Absolutely. Add cooked, diced chicken or crispy bacon bits along with the corn for extra heartiness.
