Designed for both beginner cooks and busy holiday hosts, this one-pan recipe yields tender, caramelized wedges that are naturally vegan and lactose-free.
Ingredients
Makes 6 servings
- 3 sweet potatoes
- 4 extra virgin olive oil
- 4 fresh lemon juice
- 2 salt
Method
Preheat oven to 350 degrees.
Place the potatoes in a 9 x 13 inch baking dish. In a bowl, whisk together the oil, agave nectar, and lemon juice. Pour the mixture over the potatoes and toss until potatoes are coated. Sprinkle with salt, toss again.
Bake, stirring occasionally, for one hour or until potatoes are tender and carmelized.
Season, to taste, with more salt.
Cook's notes
- Cut the sweet potatoes into uniform one-inch cubes to ensure they reach the perfect tender-caramelized texture at the same time.
- Stir the potatoes every 20 minutes during the bake to ensure the agave glaze coats every side and prevents the sugars from burning on the bottom of the dish.
- Use a light-colored baking dish to better monitor the color of the caramelization, as dark pans can cause the agave nectar to darken too quickly.
- Add the lemon juice right before serving if you prefer a sharper, more vibrant acidity to cut through the natural density of the potatoes.
Easy swaps
- Instead of Agave nectar, use Pure maple syrupProvides a slightly woodier flavor profile that pairs exceptionally well with the earthy nature of roasted potatoes.
- Instead of Extra virgin olive oil, use Melted refined coconut oilAdds a subtle tropical richness that complements the sweetness of the potatoes.
- Instead of Lemon juice, use Apple cider vinegarOffers a sharper, fermented tang that balances the sugar if you prefer a less citrusy finish.
- Instead of Sea salt, use Smoked paprika and saltIntroduce a layer of smoky complexity to offset the agave sweetness.
Frequently asked
Why do my sweet potatoes turn out mushy instead of caramelized?
Mushiness is usually caused by overcrowding the baking dish. Ensure your potatoes are spread out in a single layer to allow steam to escape and proper browning to occur.
Can I prep these ahead of time?
You can peel and cube the potatoes ahead of time and store them in a bowl of cold water in the fridge for up to 24 hours. Drain and dry thoroughly before tossing with the glaze.
Is it necessary to peel the sweet potatoes?
Peeling is optional. If you prefer a rustic texture and more fiber, scrub the skins well and leave them on; they will soften beautifully during the hour-long bake.
Will the agave nectar burn during the hour of cooking?
At 350 degrees, the agave will caramelize safely, but it is important to stir the potatoes periodically to redistribute the sugars and prevent them from scorching on the edges of the pan.
