Learn how to make creamy, additive-free almond milk right at home using your Thermomix. This simple recipe is naturally vegan, dairy-free, and much healthier than store-bought alternatives, giving you complete control over the ingredients and consistency.

Ingredients

Makes 1 serving

  • 160 water
  • 750 water

Method

  1. Place the almonds in a ceramic bowl and cover with filtered water - so that there is at least an inch of water above the almonds.

  2. Soak 24 hours, changing the water once.

  3. Rinse and drain the almonds. Place in TM bowl. Blitz 90 seconds/speed 9.

  4. Pour the almond/water mixture into a glass jar through a fine cloth to filter out all the nut fiber.

  5. Keeps 3 days in the fridge.

Cook's notes

  • For the creamiest results, soak your raw almonds for at least 8-12 hours in cold water before processing.
  • Use a nut milk bag or a clean, fine-mesh muslin cloth to squeeze out every drop of liquid for maximum yield.
  • Don't discard the leftover almond pulp! It can be dried to make almond flour or added to smoothies and oatmeal.

Easy swaps

  • Add 1-2 Medjool dates or a teaspoon of maple syrup if you prefer a lightly sweetened milk.
  • For a vanilla-infused flavor, add a splash of pure vanilla extract before blending.
  • A pinch of sea salt enhances the natural flavor of the almonds.

Frequently asked

Do I need to peel the skin off the almonds?

It is not necessary to peel the almonds. Soaking them makes them easier to blend, and the Thermomix will pulverize the skins effectively.

Why is my homemade almond milk separating?

Since this recipe contains no emulsifiers or stabilizers like store-bought versions, it is completely natural for the water and almond solids to separate. Simply give the container a vigorous shake before pouring.
