This 10-minute vegan apricot jam is the perfect quick fix for breakfast lovers. Made with simple, wholesome ingredients, this fresh fruit spread delivers a vibrant, tangy-sweet flavor profile that beats store-bought versions. It is naturally plant-based, budget-friendly, and comes together in under 15 minutes, making it an ideal topping for sourdough toast, vegan yogurt, or oatmeal.

Ingredients

Makes 4 servings

  • 1/2 water
  • 2 fructose

Method

  1. Chop the dried apricots into very small pieces.

  2. Put the apricots, water and syrup/fructose into a small saucepan and bring to the boil.

  3. Boil rapidly for a few minutes, but don't let it boil dry!

  4. Take off the heat and allow to cool.

Cook's notes

  • Use ripe, slightly soft apricots for the best natural sweetness and easier mashing.
  • For a smoother consistency, use an immersion blender once the fruit has softened.
  • To ensure the jam sets perfectly, make sure to simmer until the excess liquid has evaporated.

Easy swaps

  • Replace cane sugar with maple syrup or agave nectar for a refined sugar-free option.
  • Add a pinch of cinnamon or vanilla extract to deepen the flavor profile.
  • If you don't have fresh apricots, high-quality thawed frozen apricots work just as well.

Frequently asked

Do I need to peel the apricots for this jam?

No, you do not need to peel them. The skins soften during the cooking process and provide a lovely texture and color to the finished jam.

Is this recipe gluten-free?

Yes, this apricot jam is naturally gluten-free as it uses whole fruit and simple sweeteners.

Why didn't my jam set?

This is a 'quick jam' that does not use added pectin. If it is too runny, simply simmer it for an additional 2-3 minutes to allow more water to evaporate.
