Ingredients

Makes 4 servings

  • 4 ground mustard
  • 2 soy sauce
  • 3 saffron
  • 2 dry sherry

Method

  1. Place all ingredients into the bowl of a blender & process 30 seconds or until there is a good consistency to the sauce.

  2. Pour into a covered glass jar & store in the refrigerator.

Cook's notes

  • For a smoother texture, blend the apricot preserves until completely liquified before mixing with the mustard.
  • Apply the sauce during the last 3-5 minutes of grilling to prevent the sugars in the apricot preserves from burning.
  • Use high-quality Dijon mustard for a sharper contrast against the sweet fruit base.

Easy swaps

  • Swap apricot preserves for peach or nectarine jam if you prefer a stone-fruit twist.
  • Replace Dijon mustard with stone-ground mustard for added texture and a earthier flavor profile.
  • Add a splash of apple cider vinegar or lemon juice if you want a brighter, more acidic finish.
