Aromatic Basmati Rice (Rice Cooker)
From The Ultimate Rice Cooker Cookbook. The authors specify a 6 cup rice cooker for this, but I've had no problem with my 3 cup model. This would be wonderful as a side to tandoori chicken. Do not eat the whole spices. Cook time includes letting the rice rest on the 'keep warm' setting.

Ingredients
Makes 3 servings
- 1 basmati rice
- 1 1/2 water
- 1/4 salt
- 1 cinnamon stick
- 3 green cardamom pods
Method
Rinse the rice in a fine strainer, then drain thoroughly.
Place all ingredients in the rice cooker bowl, and swirl to combine.
Set the machine for the regular white rice cycle.
When the machine shifts to 'keep warm', set a timer for 15 minutes.
After 15 minutes, fluff rice with the plastic paddle or a wooden spoon.
Serve now, or leave on 'keep warm' for up to 4 hours.
Cook's notes
- Always rinse your basmati rice under cold water until the water runs clear to remove excess starch and prevent gumminess.
- Let the rice 'rest' for 10 minutes after the cycle finishes to allow the steam to distribute evenly for a fluffier texture.
- For extra aroma, toast the dry grains in a teaspoon of coconut oil or vegan butter before adding water to the rice cooker.
- Use a fork, not a spoon, to fluff the rice once it's finished to avoid breaking the delicate, elongated grains.
Easy swaps
- Use vegetable broth instead of water for a deeper, savory flavor profile.
- Add a whole star anise, a cinnamon stick, or a few cardamom pods to the water for an authentic, fragrant Indian-inspired twist.
- Swap brown basmati for white if you prefer a nuttier texture, but remember to increase the water ratio as specified by your rice cooker manual.
Frequently asked
Why is my rice cooker rice sticky?
Sticky rice is usually caused by not rinsing the grains thoroughly. Ensure you rinse until the water is completely clear before cooking.
What is the perfect water-to-rice ratio for basmati?
Generally, a 1:1.5 ratio (1 cup of rice to 1.5 cups of water) works best for standard rice cookers, but check your specific manufacturer guidelines as some models require slightly less water.
