Artichoke Spinach Hummus

This is a home-made version of Basha Artichoke Spinach Hommus. I love it but live too far away from Cosco to get it, so I made up my own.

Lunch/Snacks

Elevate your snack game with this creamy Artichoke Spinach Hummus. Combining the earthy richness of chickpeas with tangy marinated artichokes and fresh baby spinach, this healthy, plant-based dip is ready in just 10 minutes. Perfect for meal prep, party platters, or a quick, low-cholesterol lunch.

Ingredients

Makes 6 servings

  • 1 garbanzo beans
  • 3 tahini
  • 2 extra virgin olive oil
  • 2 lemon juice
  • 1 water
  • 3 garlic clove
  • 1 salt
  • 1/2 frozen spinach
  • 2 vinegar

Method

  1. Mix all ingredients except for spinach in food processor or blender until smooth.

  2. Stir finely chopped spinach into mixture.

  3. This will thicken after refrigeration, and is good for at least 2 weeks in the refrigerator (I've never had any last beyond then!).

  4. I serve with reduced-fat Triscuits for a high fiber lunch.

Cook's notes

  • For an ultra-creamy texture, peel the skins off your chickpeas before blending.
  • Use high-quality extra virgin olive oil to drizzle on top for a richer flavor profile.
  • If the hummus is too thick, add water or aquafaba (chickpea liquid) one tablespoon at a time until you reach your desired consistency.
  • Toast your pita bread or slice raw veggies while the hummus chills for the best flavor infusion.

Easy swaps

  • Use kale or arugula instead of fresh baby spinach for a peppery twist.
  • Replace tahini with sunflower seed butter if you have a nut or seed allergy.
  • Add a dash of red pepper flakes or cayenne powder if you prefer a spicy kick.
  • Swap lemon juice for apple cider vinegar if you are out of fresh citrus.

Frequently asked

Is this Artichoke Spinach Hummus healthy?

Yes! It is packed with fiber and plant-based protein from chickpeas, vitamins from fresh spinach, and heart-healthy fats from tahini and olive oil.

What should I serve with this vegan hummus?

It pairs beautifully with warm pita bread, crisp cucumber slices, carrot sticks, bell pepper strips, or even as a spread on vegan wraps and sandwiches.

Can I make this oil-free?

Absolutely. You can omit the olive oil and replace it with a splash of vegetable broth or water to achieve the desired blendable consistency.
