Asian Salad

We are addicted to this salad! It goes very well with sushi or as a meal itself with grilled chicken on top. This is one of my most requested recipes.

Looking for a quick, vibrant meal that doesn't require turning on the stove? This easy Asian-inspired vegan salad is the perfect solution for a healthy lunch or light dinner. Packed with fresh, crunchy vegetables and tossed in a zesty, savory dressing, this 10-minute recipe is the ultimate no-cook hack for busy days.

Ingredients

Makes 1 serving

  • 3 rice vinegar
  • 1 Kikkoman soy sauce
  • 1/4 ground ginger
  • 1 garlic clove
  • 2 sugar
  • 7 romaine lettuce
  • lettuce
  • carrot
  • celery
  • bean sprouts
  • green pepper
  • peanuts
  • cashews
  • sesame seeds

Method

  1. Mix dressing ingredients in a jar and shake.

  2. Wash and tear lettuce into a bowl, add carrots, peppers, celery to bowl and toss.

  3. Put dressing and bowl on table with bean sprouts, nuts and sesame seeds in individual bowls and tell your guests to create their own salad.

Cook's notes

  • Slice your vegetables into thin, uniform matchsticks for a better mouthfeel.
  • Massage your greens with a pinch of salt before adding the dressing to tenderize them.
  • Let the salad sit for 10 minutes before serving to allow the flavors to meld.
  • Add toasted sesame seeds or crushed peanuts for an extra crunch.

Easy swaps

  • Swap the soy sauce for tamari or coconut aminos to make this recipe gluten-free.
  • Use agave nectar or maple syrup in place of sugar for the dressing.
  • Replace rice vinegar with lime juice for a brighter, citrus-forward flavor profile.
  • Add edamame or chickpeas to boost the protein content of the salad.
