  3. Coat the whole pan.

  4. Roll the asparagus in the oil to coat all sides.

  5. Bake in 400F degrees oven for 5-7 min Do not over cook!

  6. The asparagus should just be heated through but still very crisp.

  7. Remove from oven, drizzle with the vinegar.

  8. Add salt& pepper.

  9. Sprinkle with Parmesan (if desired).

  10. Serve immediately or serve at room temperature.

Cook's notes

  • Choose asparagus spears that are uniform in thickness so they cook at the same rate.
  • Snap off the woody ends—simply bend the spear near the bottom and it will naturally break where the tough part ends.
  • Don't overcrowd your baking sheet; giving the stalks space allows them to roast rather than steam.

Easy swaps

  • Replace olive oil with avocado oil for a higher smoke point.
  • Add a sprinkle of nutritional yeast after roasting for a savory, cheesy vegan flavor.
  • Swap sea salt for smoked paprika or garlic powder to switch up the seasoning profile.
