Asparagus With Sesame Oil Vinaigrette

This is the Runner-Up recipe for 1987 in the San Francisco Chronicle. Because sesame oil is such an integral part of the dressing, be sure you use fresh oil of the highest quality. This asparagus makes a perfect accompaniment to grilled, broiled or fried salmon fillets or steak. Toasted sesame seeds sprinkled over the asparagus just before serving are a nice touch. Other vegetables, such as green beans, work well with this dressing. From Bruce Cost.

Elevate your seasonal greens with this quick and healthy Asparagus with Sesame Oil Vinaigrette. Perfect for a busy weeknight or an elegant Thanksgiving side dish, this 10-minute vegan recipe balances the earthy crunch of fresh asparagus with the aromatic, nutty depth of toasted sesame oil. Naturally low in protein and cholesterol, it is a simple yet sophisticated way to celebrate spring produce.

Ingredients

Makes 1 serving

  • 2 asparagus
  • 1 garlic
  • 1/2 salt
  • 1/2 fresh ground white pepper
  • 2 Dijon mustard
  • 1 1/2 fresh lemon juice

Method

  1. Boil the asparagus in a large quantity of water for 3 to 5 minutes, depending on thickness, then drain and run under cold water to stop the cooking. Dry thoroughly. Combine the garlic, salt, pepper, mustard and lemon juice in a bowl and whisk to blend. Whisk in the sesame oil. Pour over the asparagus, toss and serve.

Cook's notes

  • Use thin, young asparagus stalks for the most tender texture.
  • Blanch the asparagus briefly in boiling water for 1-2 minutes before plunging into an ice bath to achieve a vibrant green color and perfect snap.
  • Toast your sesame seeds in a dry pan for 30 seconds to release extra aroma before sprinkling over the dish.

Easy swaps

  • Replace rice vinegar with fresh lemon juice for a brighter, citrus-forward profile.
  • Add a dash of chili oil or red pepper flakes if you prefer a bit of heat.
  • Swap asparagus for broccolini or green beans using the same cooking method.
