Ingredients

Makes 4 servings

  • 2 grapefruits
  • 1 dry sherry
  • 4 mint leaf

Method

  1. Cut grapefruit in halves and remove fruit sections with a knife or grapefruit spoon. The pulp only- no skins.

  2. Combine in a covered bowl with all of the other ingrdients and chill at least two hours.

  3. Remove skins from grapefruit halves and use them as a serving bowl.

Cook's notes

  • Choose heavy, firm grapefruits for the juiciest results.
  • Use a serrated grapefruit knife to easily segment the fruit from the membrane.
  • Add a drizzle of agave syrup or maple syrup if you prefer a sweeter profile to balance the natural tartness.
  • Sprinkle with fresh mint leaves for an extra pop of flavor and visual appeal.

Easy swaps

  • Use blood oranges or pomelos if you want to experiment with different citrus varieties.
  • Substitute maple syrup with date nectar for a lower glycemic index option.
  • Add hemp seeds or shredded coconut on top for added texture and healthy fats.
  • Incorporate a pinch of chili powder or tajin for a spicy, savory twist.
