Discover a unique twist on a classic appetizer with these spicy Devilled Eggs, featuring a creamy potato and herb filling that's deep-fried to golden perfection. Ready in under 30 minutes, this Asian-inspired recipe is perfect for parties or a quick snack.

Ingredients

Makes 6 servings

  • 6 eggs
  • 2 potatoes
  • 1 butter
  • 1 milk
  • 1 onion
  • 2 fresh green chilies
  • 1 fresh coriander

Method

  1. Cut each egg in half and remove the yolk.

  2. Mash the yolk with the boiled potatoes, milk and butter. Add the finely chopped onion, the chilies the coriander and seasoning and continue to mash.

  3. Put the mash into the orifices left by the egg yolk, piling it high and chill for 30 minutes. Dip in batter and deep fry until golden brown.

Cook's notes

  • Boil potatoes until just tender for easy mashing without being watery.
  • Chill the filled eggs thoroughly before frying to help the batter adhere.
  • Use a neutral oil with a high smoke point, like canola or sunflower, for deep frying.

Easy swaps

  • Instead of butter, use vegan butter or olive oil for a dairy-free version
  • Instead of milk, use almond milk or coconut milk for a lactose-free option
  • Instead of fresh green chilies, use 1/2 teaspoon red chili flakes or sriracha for milder heat

Frequently asked

Can I use sweet potatoes instead of regular potatoes?

Yes, sweet potatoes work well and add a subtle sweetness that balances the spicy chilies.

What type of batter is best for deep frying?

A light tempura batter or a simple flour-and-sparkling-water batter yields a crisp, airy coating.

How do I prevent the filling from falling out during frying?

Ensure the filling is well chilled and compacted. Gently coat with batter using a spoon rather than dipping to keep the filling intact.
