Refreshing, hydrating, and naturally sweet, this Agua Fresca de Melon is the ultimate Mexican-inspired thirst quencher. Made with fresh watermelon and a hint of sparkling water for a light effervescence, this vegan drink is the perfect healthy beverage for hot summer days or casual weeknight dinners.

Ingredients

Makes 6 servings

  • 8 watermelon
  • 1/4 fresh mint leaves
  • 12 sparkling water
  • sugar
  • mint sprig

Method

  1. Whirl melon in blender in batches, adding mint leaves to one of the batches.

  2. Pour puree into large pitcher, stir in sparkling water and add sugar to taste (perfectly ripened melon should not require any).

  3. Chill at least one hour.

  4. Pour over ice in tall glasses and garnish with mint sprig.

Cook's notes

  • Use seedless watermelon to save prep time and ensure a smoother texture.
  • For a more concentrated flavor, blend the melon with just a splash of water, then top with sparkling water right before serving to maintain the bubbles.
  • Strain the blended melon through a fine-mesh sieve if you prefer a smooth, juice-like consistency rather than a pulpy texture.

Easy swaps

  • Use honeydew or cantaloupe instead of watermelon for a different melon flavor profile.
  • Swap the sparkling water for coconut water to add electrolytes and a subtle tropical twist.
  • Add a squeeze of fresh lime juice or a few torn mint leaves to brighten the flavor even further.

Frequently asked

Is Agua Fresca de Melon healthy?

Yes, it is a low-cholesterol, low-protein, and vegan-friendly beverage that is naturally hydrating thanks to the high water content in fresh melons.

Do I need to add sugar to this recipe?

Watermelon is naturally very sweet, so sugar is usually unnecessary. However, if your melon is not fully ripe, you can stir in a teaspoon of agave nectar or maple syrup to taste.

Can I make this ahead of time?

You can blend the watermelon base ahead of time and store it in the fridge, but wait to add the sparkling water until the moment you serve it to keep the drink carbonated.
