Ingredients
Makes 4 servings
- 2 papayas
- 4 sugar
- 2 lime juice
- 2 3/4 water
Method
Choose very ripe fruit; peel, seed, and coarsely chop.
Smoothly puree measured fruit pulp and juice (a portion at a time, if needed) in blender with sugar and lime juice.
Add flavored fruit mixture to water, then rub through a fine strainer into a large jar or pitcher and discard pulp.
Pour the agua fresca over ice cubes into tall glasses.
Slices or chunks of matching fruit may be added as garnish just before serving.
Cook's notes
- Choose a fully ripe papaya; it should yield to gentle pressure and have a sweet, tropical fragrance.
- For an extra smooth consistency, strain the blended mixture through a fine-mesh sieve before serving.
- Serve over crushed ice to enhance the refreshing, slushy-like appeal of the drink.
- Add a splash of sparkling water just before serving for a fun, fizzy twist.
Easy swaps
- If papaya is unavailable, this recipe works beautifully with cantaloupe or mango.
- Swap white sugar for agave nectar or maple syrup for a more natural sweetener profile.
- Add a touch of chili-lime seasoning (Tajín) on the rim of the glass for an authentic Mexican street-food vibe.
- Replace half the water with coconut water to increase electrolyte content.
