Another Eggplant Stew!

This is a recipe from my dad's vegan cookbook. My sister used to be vegan, so he made it up for her and the rest of us, if we wanted to try the recipes.

Ingredients

Makes 4 servings

  • 1/4 olive oil
  • 1 onion
  • 1 eggplant
  • 10 red bell pepper
  • 1 green bell pepper
  • 1/2 garlic cloves
  • 2 diced tomatoes
  • 2 bay leaf
  • 1/2 thyme
  • 1/2 rosemary
  • 1/4 salt
  • 1/2 paprika

Method

  1. Heat oil in a large skillet, and saute onions for 2 minutes.

  2. Add eggplant and carrots and saute for 5 more minutes, stirring frequently.

  3. Add remaining ingredients and cook, covered, on medium-low heat for 5 minutes, stirring often. Vegetables should be tender, but not mushy.

Cook's notes

  • Salt your eggplant cubes for 10 minutes before cooking to draw out moisture and ensure they hold their shape.
  • Use a heavy-bottomed pan or Dutch oven for even heat distribution to prevent the stew from burning.
  • Garnish with fresh parsley or a squeeze of lemon juice right before serving to brighten the earthy flavors.

Easy swaps

  • Replace eggplant with zucchini if you prefer a softer texture.
  • Swap vegetable broth for a splash of dry white wine to add depth to the sauce base.
  • Add chickpeas or lentils if you want to increase the protein content while keeping the meal vegan.
