Cool down with this refreshing Apple Mint Granita, a vibrant vegan dessert that perfectly balances the crisp sweetness of fresh apples with the cooling sensation of garden-fresh mint. This simple, healthy treat is naturally low-protein, cholesterol-free, and incredibly easy to whip up, making it the perfect guilt-free indulgence for hot days or a light palate cleanser after a meal.

Ingredients

Makes 1 serving

  • 4 mint leaves
  • 10 unsweetened applesauce
  • 4 sugar
  • 7 lemon juice
  • 2 salt

Method

  1. Mix apple juice and mint leaves and allow to combine overnight in refrigerator. Strain mint leaves out of apple juice.

  2. Place a shallow metal pan in freezer. In a nonreactive saucepan, combine applesauce, mint flavored apple juice, sugar, lemon juice and salt. Bring to a boil, then simmer uncovered about 20 minutes.

  3. Cool to room temperature.

  4. Pour apple mixture into chilled pan; return to freezer. Stir every 20 minutes until it thickens into coarse crystals, about 1 hour.

  5. Stir granita and mound into small cups. Serve immediately.

Cook's notes

  • Use high-quality apple juice or freshly pressed apples for the best flavor profile.
  • For a smoother texture, scrape the mixture with a fork every 30 minutes during the freezing process to create delicate, fluffy ice crystals.
  • Chill your shallow metal pan in the freezer for 15 minutes before pouring the mixture in to help the granita set faster.
  • Add a splash of fresh lime juice to brighten the flavor and prevent oxidation.

Easy swaps

  • Replace fresh mint with basil for a unique, sophisticated herbal twist.
  • Swap standard apple juice for cloudy apple cider for a deeper, more robust fruit flavor.
  • If you prefer a sweeter treat, add a touch of agave nectar or maple syrup to the base mixture before freezing.
