Experience the vibrant flavors of the Middle East with this quick and easy Arabian-inspired cauliflower with tahini recipe. Roasted to perfection and drizzled with a creamy, nutty tahini sauce, this vegan dish is the perfect side or light main. Ready in just 20 minutes, it’s a healthy, low-cholesterol meal that brings restaurant-quality Mediterranean flavors straight to your kitchen.

Ingredients

Makes 1 serving

  • 1 cauliflower
  • 2 -3 garlic cloves
  • 1/2 tahini
  • 1/2 - 1 ground cumin
  • 1 cayenne
  • 1 water
  • 3 -5 paprika
  • parsley
  • cilantro
  • lemon wedge

Method

  1. Cook the cauliflower by steaming or boiling until just tender; do not overcook! Drain and set aside.

  2. Mix the garlic with the tahini, cumin and lemon juice. Season with salt, pepper and hot pepper sauce.

  3. At this point the mixture is a dense thick paste. Add a little water, tablespoon by tablespoon, until the mixture is creamy, then mix with the cauliflower.

  4. Cover and refrigerate until ready to serve.

  5. At serving time, garnish with a sprinkle of paprika, chopped parsley/cilantro and/or lemon wedges.

Cook's notes

  • Cut the cauliflower into uniform, small florets to ensure they roast evenly and caramelize quickly.
  • For extra depth, toast your sesame seeds before blending them into the tahini sauce.
  • Add a splash of warm water to the tahini sauce one teaspoon at a time; it will seize up before it becomes smooth and creamy.

Easy swaps

  • If you don't have fresh parsley, swap in chopped fresh cilantro or mint for a different aromatic profile.
  • Add a pinch of smoked paprika or sumac over the finished dish for a beautiful pop of color and a touch of tang.
  • If you prefer more heat, sprinkle with red chili flakes or a dash of harissa paste.
