Ingredients

Makes 2 servings

  • 1 asparagus spear
  • 1/2 salt
  • 1/2 sugar snap pea
  • 1 frozen corn
  • 1/4 tamari soy sauce
  • 2 sake

Method

  1. In a small pan, boil water. Add salt and asparagus and cook for 1-3 minutes depending on how thick the asparagus stems are.

  2. Immediately immerse the asparagus in the ice water to stop further cooking and drain.

  3. In a saute pan, heat sesame oil and sauté sugar snap peas and red pepper until the vegetables are tender but still crisp.

  4. Add asparagus, corn (if using), tamari, sake, salt and pepper. Sauté until all the vegetables are heated through.

  5. Transfer to dishes, sprinkle sesame seeds, infuse love and serve!

Cook's notes

  • Blanch the asparagus and snap peas briefly before stir-frying to ensure they remain bright green and perfectly crisp-tender.
  • Use a high-smoke point oil like avocado or grapeseed oil to achieve that authentic 'wok hei' or stir-fry sear.
  • Prepare all your vegetables and sauce components before heating the pan, as stir-frying happens very quickly.

Easy swaps

  • Swap asparagus for green beans or broccoli florets if preferred.
  • Use tamari or coconut aminos instead of soy sauce for a gluten-free version.
  • Add toasted sesame seeds or sliced almonds for an extra layer of texture and healthy fats.

Frequently asked

Is this stir fry suitable for a low-protein diet?

Yes, this recipe is naturally low in protein and cholesterol, making it an excellent vegetable-forward option for those monitoring their protein intake.

How do I keep the snap peas from getting soggy?

The key is high heat and short cooking time. Stir-fry for only 2-3 minutes until they are vibrant and crisp-tender, and remove them from the heat immediately.
