Easy Easy Bellini

This is good, refreshing and very easy to make with only a few ingredients. It looks very pretty served in champagne flutes. It serves two - four people, depending on size of glass. Enjoy!

This Easy Easy Bellini is the ultimate party starter—a sparkling, peach-forward cocktail that comes together in just 20 minutes. With only two simple ingredients plus a touch of sugar for the rim, it’s the perfect balance of sweet and bubbly. Whether you're hosting a brunch, celebrating a special occasion, or just treating yourself on a sunny afternoon, this refreshing drink delivers café-quality flavor with minimal effort. The secret? Chilled glasses, a frosty pitcher, and a sugar-kissed rim that makes every sip feel like a celebration.

Ingredients

Makes 1 serving

  • 1 1/3 seltzer water
  • 1/3 white sugar

Method

  1. Chill glasses in freezer.

  2. Combine chilled nectar and seltzer in pitcher and blend well, place back in refrigerator until ready to use.

  3. Remove the glasses from freezer, just before serving.

  4. Rim the glasses with peach nectar, don't worry if it runs down into the glass.

  5. Dip the glass in sugar, to evenly coat rim of glass. You could use coloured sugar, yellow, orange or pink, for this garnish.

  6. Pour the peach and orange bellini mixture into the glasses and garnish with a small orange wedge.

  7. Serve immediately.

Cook's notes

  • Use high-quality peach nectar for the best flavor—look for one with no added sugars if you prefer a less sweet drink.
  • For a non-alcoholic version, skip the prosecco or sparkling wine and use extra seltzer water. This makes a perfect mocktail for all ages.
  • To make colored sugar rims, mix a few drops of food coloring into the sugar and let it dry for 10 minutes before dipping.
  • Chill your glasses for at least 30 minutes (not just 20) for an extra frosty effect.
  • If you're making this for a crowd, double or triple the recipe and serve from a large pitcher or punch bowl.

Easy swaps

  • Instead of seltzer water, use club soda or sparkling mineral water
  • Instead of white sugar, use superfine sugar, coconut sugar, or a sugar substitute for a low-carb option
  • Instead of peach nectar (implied), use fresh peach puree or store-bought peach juice

Frequently asked

Can I make this Bellini ahead of time?

Yes! Prepare the peach nectar mixture (without seltzer) up to 2 days in advance. Just before serving, add the seltzer and stir gently to retain carbonation.

What can I use instead of seltzer water?

Club soda or sparkling mineral water work perfectly. If you want a sweeter fizz, you can also use lemon-lime soda, but adjust the sugar accordingly.

How do I get a perfect sugar rim?

Dip the rim of the glass into a shallow dish of peach nectar, then immediately dip into sugar. Rotate the glass to coat evenly. For a thicker rim, repeat the process.

Is this recipe alcoholic?

The original recipe is non-alcoholic (uses seltzer water). To make it a classic Bellini, replace the seltzer with prosecco or champagne.

Can I use frozen peaches?

Absolutely! Thaw frozen peaches, blend them, and strain to get a smooth nectar. This works great when fresh peaches aren't in season.
