Tuna mornay is the ultimate comfort food that comes together in under an hour. This creamy, cheesy casserole is packed with tender tuna, sweet corn, and peas, all baked under a golden breadcrumb topping. Perfect for busy weeknights or a cozy family dinner.

Makes 1 serving
- 1 onion
- 2 1/2 butter
- 3 margarine
- 350 plain flour
- 150 milk
- 50 cheddar cheese
- 2 tuna in water
- 1 1/2 corn kernels
- 1 peas
- 1/2 celery
- 2 fresh parsley
- 2 lemon juice
- 1/2 curry powder
- 2 butter
- 1 spring onion
Method
Melt butter in a medium pan and fry the onion until tender.
Remove pan from heat and stir in the flour, then return to low heat for a few minutes.
Remove pan from heat once again and gradually stir in the milk, return the pan to the heat and stir until it becomes a white sauce and thickens.
Add the cheese's and stir until its melted.
Place tuna in a casserole dish and mix in corn, peas, celery, parsley, lemon juice and curry powder. Stir ingredients until combined and then season to taste.
Mix breadcrumbs with melted butter (I make fresh breadcrums in the processor and add the butter to make it easier). and top the mornay with breadcrumbs.
Place into 200c oven and heat for 10-15 minutes or until heated through and breadcrumbs are lightly browned.
Serve.
Cook's notes
- For extra crunch, toast the breadcrumbs in a pan with butter before topping the casserole.
- Swap canned tuna for leftover cooked salmon or chicken for a tasty variation.
- Add a pinch of cayenne pepper or paprika for a subtle kick of heat.
Frequently asked
Can I use fresh tuna instead of canned?
Yes, you can. Cook fresh tuna until flaky, then flake it and use in place of canned tuna.
What type of cheese works best?
Cheddar is classic, but a mix of cheddar and mozzarella or Gruyère adds extra creaminess and flavor.
Can I make this gluten-free?
Absolutely. Use gluten-free flour for the sauce and gluten-free breadcrumbs for the topping.
How do I prevent the sauce from being lumpy?
Whisk continuously when adding milk to the flour mixture, and ensure the flour is fully incorporated before adding liquid.
