Ingredients

Makes 1 serving

  • 12 cream cheese
  • 2 sugar
  • 1/2 vanilla
  • 1 eggs

Method

  1. Line muffins with foil liners. Place one vanilla wafer in liner.

  2. Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs. Mix well.

  3. Pour over wafers, filling 3/4 full.

  4. Bake at 325 for 25 minutes. Remove from pan when cool. Chill.

  5. Top with fruit and nuts.

Easy swaps

  • Instead of 12 cream cheese, use Use 3 (8 oz) packages of full-fat cream cheese for best texture. For a lighter version, substitute 2 packages with reduced-fat cream cheese (note: texture may be slightly less creamy).
  • Instead of 2 sugar, use Granulated sugar is standard. For a less refined option, use coconut sugar or a sugar substitute like erythritol, adjusting to taste.
  • Instead of 1/2 vanilla, use Use 1/2 teaspoon vanilla extract, or substitute with 1/4 teaspoon vanilla bean paste or the seeds from half a vanilla bean for a more intense flavor.
  • Instead of 1 eggs, use One large egg is required. For a vegan alternative, use a flax egg (1 tbsp ground flaxseed + 3 tbsp water) or a commercial egg replacer, though the texture will be denser.

Frequently asked

Can I make these mini cheesecakes ahead of time?

Absolutely! These are perfect for making a day or two in advance. Just keep them refrigerated and add the fruit and nuts right before serving to keep them fresh.

What if I don't have vanilla wafers?

You can use graham cracker crumbs mixed with a little melted butter as a crust alternative. Simply press about 1 tablespoon of the mixture into each liner instead of a whole wafer.

Why did my cheesecakes crack?

Cracks usually happen from overbaking or sudden temperature changes. Bake just until the edges are set and the center is slightly jiggly. Cool them slowly at room temperature before refrigerating.

Can I add other flavors to the batter?

Of course! You can mix in lemon zest, chocolate chips, or a swirl of caramel or fruit puree. Just be careful not to overmix.

How do I know when they are done baking?

The mini cheesecakes are done when the edges are set and the centers are almost set but still slightly wobbly. They will firm up as they chill.
