Frequently asked
Can I use fresh pineapple instead of canned?
Yes, but you'll need to crush it and drain well. Add 3 tablespoons of pineapple juice or water to replace the reserved syrup.
Can I substitute the buttermilk baking mix?
You can use a homemade mix of 2 cups all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon salt, and 1/4 cup cold butter cut in. Adjust liquid as needed.
How do I know when the bread is done?
Insert a toothpick into the center; it should come out clean or with a few moist crumbs. Baking time is 50-60 minutes at 350°F.
