- 8 oz cream cheese softened
- 1 cup shredded cheddar cheese
- 12 strips bacon
- 1 cup all-purpose flour
- 2 large eggs beaten
- 2 cups panko breadcrumbs
- Vegetable oil for frying
- Ranch dressing for serving
Cut jalapeños in half lengthwise and remove seeds and membranes.
Mix softened cream cheese and shredded cheddar cheese in a bowl until well combined.
Fill each jalapeño half with the cheese mixture.
Wrap each stuffed jalapeño with a strip of bacon, securing with toothpicks if needed.
Set up three stations: flour in one dish, beaten eggs in another, and panko breadcrumbs in a third.
Dredge each bacon-wrapped jalapeño in flour, then egg, then breadcrumbs, coating thoroughly.
Heat oil to 350°F in a deep fryer or heavy pot.
