Start your morning with a refreshing bowl of Almond-Cherry Cereal, a quick and wholesome vegan breakfast that highlights the perfect balance of creamy plant-based goodness and vibrant fruit flavors. This healthy, low-cholesterol recipe comes together in under 5 minutes, making it the ideal choice for busy mornings when you need a nutritious, delicious boost to fuel your day.
Ingredients
Makes 1 serving
- 3/4 - 1 almond butter
- 1 1/2 - 2 banana
- 1/2 cherries
- 8 soymilk
Method
Put the cereal flakes in a bowl and dollop the almond butter on top. (If the almond butter is stiff from refrigeration, you might want to nuke it a few seconds to make it softer & easier to stir in.)
Add the soymilk and stir everything around. You'll probably need two spoons for this, and there will be clumps of almond butter and flakes- this is normal, it won't all stir up uniformly. (These clumps are the tastiest part!).
Dump the fruit on top, and quickly stir it inches Enjoy!
Cook's notes
- For extra crunch, toast your almond flakes in a dry pan for 2-3 minutes until golden brown.
- Use chilled almond milk to keep the cereal refreshing, especially during warmer months.
- Add a drizzle of maple syrup or agave nectar if you prefer a touch of extra sweetness.
Easy swaps
- Swap almond milk for soy, oat, or coconut milk based on your preference.
- If fresh cherries are out of season, frozen cherries (thawed) or dried tart cherries work beautifully.
- Mix in chia seeds or hemp hearts to boost the protein and omega-3 content of your bowl.
