Aloo Matar

This is a recipe for Aloo Matar that I got off the internet. I went for my first Indian food experience, and happened to order Aloo Matar even though I had no idea what it was. It was fantastic! So I went searching right away for a recipe that I could use at home. Who knew it was so easy and inexpensive!!

Warm, comforting, and packed with aromatic spices, this traditional vegan Aloo Matar recipe brings the authentic flavors of an Indian homestyle kitchen to your table in under 40 minutes. Featuring tender potatoes and sweet green peas simmered in a fragrant tomato-onion gravy, it is the perfect nutritious plant-based meal for busy weeknights.

Ingredients

Makes 1 serving

  • 2 potatoes
  • 2 green chili
  • 1 -2 garlic paste
  • 1 ginger paste
  • 2 tomato sauce
  • 2 olive oil
  • 1 -2 cumin seeds
  • 1/4 bay leaves
  • 2 turmeric
  • 2 garam masala
  • 1/2 coriander powder

Method

  1. Heat oil over medium heat.

  2. Add cumin seed and bay leaves.

  3. When seeds begin to splutter, add onion, garlic, and ginger paste and saute until oil separates.

  4. Add half the tomato sauce, tumeric, garam masala, red pepper, and corriander powder.

  5. Stir fry until the oil separates.

  6. Add peas, potatoes, and green chilis and the rest of the tomato sauce and heat through.

  7. Take out the bay leaves.

  8. I like to serve this over jasmine rice with pita bread or naan. You can also add plain yogurt to taste if you desire a creamier dish.

  9. Enjoy!

Cook's notes

  • For the best texture, use starchy potatoes like Yukon Gold or Russet; they absorb the spices beautifully.
  • Sauté the onions, ginger, and garlic until golden brown to create a deep, savory base for your curry.
  • If you prefer a thicker gravy, lightly mash a few of the cooked potato cubes directly in the pan.
  • Add a handful of fresh cilantro at the very end for a bright, herbaceous finish.

Easy swaps

  • Use frozen peas for convenience, or fresh peas if they are in season.
  • If you don't have fresh tomatoes, you can substitute with 1/2 cup of tomato purée.
  • For a creamier finish, stir in a tablespoon of full-fat coconut milk or vegan yogurt just before serving.
  • Adjust the heat level by swapping the green chili for a pinch of Kashmiri red chili powder.
