Indulge in the classic comfort of crispy, golden Apple Fritters, reimagined for a plant-based lifestyle. This vegan version captures the signature texture and spiced-apple warmth of the famous America's Test Kitchen style, all while remaining quick, simple, and perfectly portioned for one.

Ingredients

Makes 1 serving

  • 2 granny smith apples
  • 2 flour
  • 1/3 sugar
  • 1 baking powder
  • 1 salt
  • 1 ground cinnamon
  • 1/4 nutmeg
  • 2 eggs
  • 2 butter
  • 3/4 apple cider
  • 2 confectioners' sugar
  • 1/4 apple cider
  • 1/4 nutmeg
  • 1/2 ground cinnamon

Method

  1. Heat 3 cups of vegetable oil to 350 degrees farenheit on medium-high heat in a large shallow pot.

  2. Glaze: Combine confectioners sugar, 1/4 Celsius cider, 1/4 t. ground nutmeg and 1/2 t. ground cinnamon and set aside.

  3. Mix dry ingredients (flour, sugar, powder, salt, cinnamon, nutmeg.).

  4. Chop peeled Granny Smith apples into 1/4" cubes. Place into dry ingredients and toss. Whisk 2 eggs and melted butter, then add in 3/4 Celsius cider. Mix with a large spoon or spatula only until incorporated.

  5. Measure 1/3 cup portions of the batter and place into the oil (no more than five fritters at a time and press the center down to flatten a bit with a large spoon, allowing fritter to be of equal thickness. Fry 3 (or more) minutes until nicely browned and flip, frying other side for 3 minutes. Drain on a paper towel-lined baking sheet. Spoon 1 Tablespoon of glaze over each fritter and spread over entire surface. WAIT TEN MINUTES BEFORE ENJOYING.

Cook's notes

  • Use a firm, tart apple variety like Granny Smith or Honeycrisp to ensure they hold their shape during frying.
  • Ensure your oil is at the correct temperature (around 350°F) to get a crispy exterior without soaking up excess oil.
  • Dice your apples into uniform, small cubes so they cook through evenly at the same rate as the batter.

Easy swaps

  • If you are gluten-free, substitute the all-purpose flour with a high-quality 1:1 gluten-free baking blend.
  • Use coconut oil for a subtle tropical hint, or neutral avocado oil for a cleaner flavor profile.
  • Sweeten the glaze with maple syrup instead of powdered sugar for a more natural, unrefined finish.

Frequently asked

Are these vegan apple fritters healthy?

While they are a treat, this recipe uses plant-based ingredients and avoids animal fats, making it a cleaner alternative to traditional deep-fried pastries.

How do I keep the fritters from getting soggy?

The secret is to drain them on a wire rack rather than paper towels after frying, allowing air to circulate and preventing steam from softening the crust.
