Apricot and Poppy Seed Jam

A simple and delicious combination: fully riped apricots and poppy seeds. To make it fruity I used lime juice and Dr. Oetker's super gelling sugar 1:3. With this gelling sugar you only need 1/3 of the fruit weight to make the jam.

Breakfast

Experience the authentic taste of a traditional German breakfast with this homemade Apricot and Poppy Seed Jam. Combining the sun-ripened sweetness of fresh apricots with the subtle, nutty crunch of poppy seeds, this vegan preserve is the perfect spread for crusty bread, warm scones, or stirred into morning porridge.

Ingredients

Makes 1 serving

  • 900 apricots
  • 300 poppy seeds
  • 2 lime juice

Method

  1. After pitting the apricots measure the fruit to make 900 g fruit for jam.

  2. Cut the apicots into small to very small pieces.

  3. Mix apricots and sugar in a suited pot and let stand for about 1 hour.

  4. Bring apricot mixture to a boil over medium high heat stirring frequently. Cook for 4 minutes strirring all the time.

  5. Remove from heat and add lime juice and poppy seeds. Mix.

  6. Fill into twist off preserving jars and close jars. Let stand for 1 minute and then turn up side down. Let stand for 10 minutes and turn over again. Let cool completely.

  7. NOTE on "Dr. Oetker's Super Gelling Sugar 3:1". Dr. Oetker is a well known brand in Germany. There are several gelling sugars available. The "3:1" super gelling sugar already contains pectin and you only need 1/3 of sugar. If you can't get it, you could also use Dr. Oetker's 2:1 super gelling sugar (then use 450 g sugar). Follow the instructions on the package.

Cook's notes

  • Use slightly firm, ripe apricots for the best texture and natural pectin levels.
  • Toast your poppy seeds in a dry pan for 1-2 minutes before adding to the jam to unlock a deeper, nuttier flavor profile.
  • To check if the jam is set, place a small plate in the freezer; spoon a little jam onto it, wait a moment, and push it with your finger—if it wrinkles, it is ready.

Easy swaps

  • If you prefer a lower-sugar option, swap the standard sugar for a natural fruit pectin and cane sugar alternative.
  • Swap poppy seeds for chia seeds if you want a quicker jam with added fiber and a similar poppy-seed crunch.
  • For a zesty twist, add the zest of half a lemon during the boiling process.
