Ingredients
Makes 1 serving
- 1 cauliflower
- 2 -3 garlic cloves
- 1/2 tahini
- 1/2 - 1 ground cumin
- 1 cayenne
- 1 water
- 3 -5 paprika
- parsley
- cilantro
- lemon wedge
Method
Cook the cauliflower by steaming or boiling until just tender; do not overcook! Drain and set aside.
Mix the garlic with the tahini, cumin and lemon juice. Season with salt, pepper and hot pepper sauce.
At this point the mixture is a dense thick paste. Add a little water, tablespoon by tablespoon, until the mixture is creamy, then mix with the cauliflower.
Cover and refrigerate until ready to serve.
At serving time, garnish with a sprinkle of paprika, chopped parsley/cilantro and/or lemon wedges.
Cook's notes
- Cut the cauliflower into uniform, small florets to ensure they roast evenly and caramelize quickly.
- For extra depth, toast your sesame seeds before blending them into the tahini sauce.
- Add a splash of warm water to the tahini sauce one teaspoon at a time; it will seize up before it becomes smooth and creamy.
Easy swaps
- If you don't have fresh parsley, swap in chopped fresh cilantro or mint for a different aromatic profile.
- Add a pinch of smoked paprika or sumac over the finished dish for a beautiful pop of color and a touch of tang.
- If you prefer more heat, sprinkle with red chili flakes or a dash of harissa paste.
