Whether you are drizzling it over a crunchy slaw or using it as a marinade for tofu, this healthy dressing is an essential staple for any plant-based kitchen.

Ingredients

Makes 1 serving

  • 1/2 rice vinegar
  • 1 red wine vinegar
  • 2 sherry wine
  • 2 garlic cloves
  • 2 soy sauce
  • 1 cornstarch
  • 1 cold water

Method

  1. In a small saucepan, combine all ingredients except cornstarch and water.

  2. Bring to a simmer.

  3. Cover and simmer for 10 minutes.

  4. Remove from heat.

  5. Using a slotted spoon, discard garlic and ginger.

  6. Dissolve cornstarch in water and stir into sauce.

  7. Simmer, stirring constantly, until sauce thickens slightly, about 2 minutes.

  8. Transfer to small bowl, cover and refrigerate until thoroughly chilled.

Cook's notes

  • Use a microplane or fine grater to mince the ginger for a smoother texture without woody fibers.
  • Let the dressing sit for at least 10 minutes before serving to allow the ginger and garlic flavors to infuse fully.
  • Emulsify by whisking vigorously or shaking in a mason jar until the oil and vinegar are perfectly blended.

Easy swaps

  • Replace soy sauce with tamari or coconut aminos to make this recipe gluten-free.
  • Use agave nectar or maple syrup if you prefer a different sweetener than traditional sugar.
  • Add a dash of chili oil or sriracha if you prefer a spicy kick to your dressing.
