" Berry French Toast" Oatmeal
The first time I made oatmeal this way I thought it tasted like french toast topped with berries...thus the name! :) Use whichever kind of berries you like...my personal favorite is cherries.

This 'Berry French Toast' Oatmeal mimics the warm, nostalgic flavors of a classic griddled breakfast in a quick, microwave-friendly bowl. It is the perfect speedy solution for busy vegans craving a comforting, fruity start to the day without standing over a stove.
Ingredients
Makes 1 serving
- 1/2 old fashioned oats
- 1 water
- 1/2 berries
- 1 ground flax seeds
- 2 I Can't Believe It's Not Butter® Spread
Method
Add 1/2 cup old-fashioned oats and 1 cup water into a large microwaveable bowl.
Cook in microwave on 50% power for 6 minutes.
Place frozen berries in small bowl and defrost in microwave until the juice from the berries is released (it takes about 50 seconds on mine).
Add defrosted berries(+ juice), sugar free syrup, butter spray, and flax seed together and stir well.
Enjoy!
Cook's notes
- Use a deep, oversized microwave-safe bowl to prevent the oats from boiling over while cooking on 50% power.
- Stir the flax seeds in vigorously after the oats are cooked; this creates a thickened, slightly 'custard-like' texture reminiscent of soaked bread.
- Save the juice released by the berries—this is the 'French toast syrup' component that flavors the entire bowl.
- If you prefer a thicker consistency, let the oatmeal stand for two minutes after microwaving before stirring in the berries.
Easy swaps
- Instead of 1 cup water, use Unsweetened soy or almond milkUsing a plant-based milk adds creaminess and a richer, protein-packed base compared to water.
- Instead of I Can't Believe It's Not Butter® Spread, use Vegan butter or refined coconut oilThese fats offer a more neutral or decadent mouthfeel that better mimics the richness of fried French toast.
- Instead of Ground flax seeds, use Chia seedsChia seeds provide a similar thickening effect, though they will add a slight crunch to your oatmeal texture.
- Instead of Old fashioned oats, use Quick-cooking oatsIf you are in a rush, quick oats will cook in half the time, though you should monitor the microwave closely to prevent boil-over.
Frequently asked
Why cook the oats on 50% power?
Lower power settings prevent the oats from foaming over the sides of the bowl and ensure the grains soften evenly without turning into a gummy paste.
Can I use fresh berries instead of frozen?
Yes, but you will need to gently simmer them on the stovetop or microwave them with a teaspoon of water to release the juices required for the 'French toast' flavor profile.
Does this recipe actually taste like French toast?
The combination of the buttery spread, fruit syrup, and the specific texture created by the flax seed mimic the essential butter-and-syrup profile of traditional French toast.
How do I make this more filling?
Stir in a tablespoon of almond or peanut butter once the oats are finished to add extra satiety.
